Butternut Squash & Chickpea Curry (Slow cooker)

Serves 8


  • 1 Butternut Squash (peeled and chopped in to inch-wide chunks)
  • 1 tin of coconut milk
  • 225g dried chickpeas (don't use a tin or soaked else the curry ends up very wet)
  • 1 onion (chopped)
  • 4 garlic cloves (crushed)
  • 6-10 cherry tomatoes (chopped)
  • 750ml vegetable stock
  • 3 tbsp mild curry powder


1. Chuck it all in the slow cooker

2. Put on high for 6 hours

3. Serve with rice and veggies and enjoy.
